Even though the weather has been more like spring than winter around here, a bowl of homemade soup is always a good choice to nourish both body and soul. To make this organic turkey soup you will need: 1 lb organic ground turkey, 1 quart (4 cups) organic broth or stock (can be chicken, turkey, vegetable), 4-5 Tbsp organic pastured butter, 1 medium sized organic onion, 3-4 organic carrots, 2-3 medium organic potatoes, 2 cloves of organic garlic minced, 1 tsp organic thyme, 1 tsp organic rosemary, salt and pepper to taste. (For a vegetarian option simply omit turkey and use vegetable broth)
Begin by peeling and chopping the onion and carrots. In your soup pot, melt 4-5 Tbsp butter. Add the chopped carrot and onion to the melted butter and simmer or saute until the onions are soft and translucent. In a separate pan, brown the ground turkey.
Add the broth, garlic, thyme, rosemary, and a pinch of salt and pepper to the soup pot and simmer.
As the broth is heating, peel and cut your potatoes. Add potatoes and browned turkey to the pot. Cook until the potatoes are soft and the flavors are well-blended. Add salt and pepper as needed.
